Three Bean Pie

Welcome to my blog!!! Thanks for stopping by. I wanted to share a couple of family recipes that have been adapted and passed through the family. The Three Bean Pie is a go to for me when I want a filling family dinner at a low cost. This recipe is easy and while the cooking time is almost an hour....it is super easy to pull together. I hope you enjoy the post and let me know if you try it!

Here are the easy directions to make this fun pie:

1 Box Pie Crust

3/4 c. Chopped Onion

1-2 Cloves Garlic

1 Medium Zucchini, chopped to bite sized pieces

1 Medium Squash, chopped to bite sized pieces

1 Can Small White Beans, rinsed- removes extra sodium

1 Can Red Beans, rinsed

1 Can Black Beans, rinsed

1 Can Sliced Carrots, drained

2 14.5 oz Basil, Oregano & Garlic diced tomatoes, drained

1/3 c. chopped fresh basil

1/2 tsp. White Pepper

Pre-heat oven to 400

Meanwhile pull out refrigerated pie crust- you can make your own, I try to find a pie crust with under four ingredients, usually the cheaper the better. Let pie crust come to room temperature so it will not rip and is easier to work.

Pre-bake the bottom pie crust in pre-heated oven. This pie thick and I have learned the hard way, that if you don't pre-bake the bottom, it will NEVER cook and you end up with a soggy mess at the bottom.

Find a bowl and combine ALL ingredients and mix. My kids love to help with this.

After combining everything, put it into the pie pan, I used a casserole dish, because I don't have two pie pans. :) This recipe would definitely make two pies.

Once everything is tucked in, cut vents at the top and put in in the oven for 40- 50 minutes. Enjoy!
